(Amaranthus caudatus) Annual Huge dark burgundy red plumes look as if an elephant is raising its trunk into the air. Long bloomer that grows to 5', (152 cm) grabbing attention in the garden. It is also an excellent cut flower. An heirloom that was brought here from Germany in the 1880’s; seeds are edible and can be popped, cooked like a grain or ground into flour. Not only are the seeds edible, but the young leaves are nutritious greens.

Very darkest of all salad greens, a few years ago I would not have given you two cents for a packet of orach seeds. Now I wouldn't be without this nutrient dense powerhouse. This orach variety loves hot weather, and keeps its profound colour while many other greens have gone pale. The succulent savoyed leaves have a refreshing and faintly salty taste that combines beautifully in summer salads; great as a baby salad gree too.  Used to great effect in the "edible landscape".
