Amaranth greens and seeds are edible.

Annual,  40 to 45″,  full sun, days to maturity: 65 – 75 days, plant spacing: 12″, pinch: when 12″ tall, vase life: 7-10 days

Start seed indoors 4 – 6 weeks before last frost; transplant out after all danger of frost has passed. Amaranth can also be direct-seeded into the garden once all danger of frost has passed and will self seed here.

Harvest when seed heads get large and intensely coloured. Remove most of the foliage.
